The Bacon Brunchie Munchie
Breakfast is one of the most important meals of the day, along with lunch, dinner, tiffin, elevenses, pre-dinner aperitifs and hors d’oeuvres. Saying that, I often miss breakfast due to the heavy schedule of applying and testing recipes to create the ultimate surreal snacking experience. However, on days when I brunch or break the fast of the night, then the following sandwich works as merry as a merry person who is merry.
Betwixt two slices of fine thick and seeded/brown/white bread, place these ingredients:
Mustard spread evenly and thickly if you like
Bacon, crisp and wonderful
Avocado
Tomato
Mayonnaise
Top it off with a fried or poached egg.
Et voila! Magnifique! Simple, yet ever so tasty and something to enjoy again and again and again and again.
Succulent; tender; gooey and full of goodness, well nearly anyway.
A good tip for the bacon, thanks to Amanda O’Reilly, head chef at Chez Paygate, place the fat tail of the bacon down and the body bit on top, this creates a beautiful crisp side and the top tender and soft. It is easy, just fold it in half. I see bacon as a question mark ?, so put the dot end onto a hot pan and the curly end on top. If that makes any sense at all.
